Jordan's Kitchen Cooking Class: SUMMER SUPPER


  • Eggplant puree with roasted garlic, “melted” onion and grilled bread
  • Mixed seafood salad with rock shrimp, mussels, local halibut and crushed avocado
  • Lemon and rosemary roasted chicken with summer squash and goat cheese gratin
  • Mixed berry crumble with ground almonds, brown sugar and vanilla whipped cream

By now the farmer’s markets will be going off with the beginning of some summer produce. It’s an exciting next few months to be sure…This four course menu is perfect for entertaining a group of family and friends but any of these dishes can stand on their own. I love to start meals off with a thick slice of country style grilled bread and a delicious spread, in this case a slow roasted eggplant and garlic puree with a pile of wild arugula. Next we will work with a handful of pristine seafood to create an absolutely brilliant seafood salad. The creaminess of the avocado will balance out the sweet and salty flavors of the seafood nicely along with some fresh lemon to give it an additional lift. Besides pizza, roast chicken is my favorite food. It’s too bad most people have such difficulty mastering it. You’ll learn how to get it perfect every time…For dessert what’s better then a warm crumble made with the seasons best strawberries, raspberries, blackberries and blueberries? Can’t wait until summer!
