Jordan's Kitchen Cooking Class: SUMMER SUPPER

  • Local king salmon tartare with shaved radish, cucumber and chive oil
  • Smokey eggplant and roasted garlic puree with grilled bread, wild arugula and shallots
  • Tri-Tip steak with sweet corn salsa, saute of summer squash and goat cheese
  • Roasted peaches with Riesling, Indian spices and crumbled Amaretti cookies

With ingredients like peaches, local king salmon, sweet corn and summer squashes it’s no wonder that everyone loves summer time. This four course menu will highlight so many of our favorite foods available at the market. A really clean and bright tartare with our local wild salmon is an incredible way to showcase how pristine the fish is. The next course features and eggplant spread that is one of my favorites; a perfect dish for entertaining. Tri Tip is such a California classic cut with amazing flavor and it screams summer time in the back yard (if you actually have one). And the roasted peaches is the one dessert I look forward to all year long. They are cooked in Riesling that’s been infused with ginger, cardamom, cloves and more.
