Jordan's Kitchen Cooking Class: SUMMER SUPPER

  • Watermelon “Greek” salad with Kalamata olives, cucumbers and Feta cheese
  • Grilled Monterey Bay squid with salsa verde
  • Harissa and dill rubbed Tri Tip with mixed summer squashes and Marcona almond pesto
  • Whipped honey and vanilla frozen yogurt with marinated strawberries and candied hazelnuts

Summer has begun so we always celebrate with our Summer Suppers class. This years menu is great and focuses on so many nice local ingredients. The first course is a spin on the classic greek salad but with juicy watermelon taking the place of the tomatoes. The sweetness of the watermelon pairs perfectly with the saltiness of the feta cheese and olives. Squid is one of my all time favorite ingredients and a real joy to work with. Teaching home cooks how to clean, prep and cook it so they will no longer be intimidated is very satisfying. The salsa verde you’ll incorporate into so many home cooked dishes in your future. Most people love to grill in the summer and this is a great class to improve those skills.
