Go Fish is always one of our most popular classes so this is a natural off shoot of that class. Everyone I know loves seafood; it’s sweet, briny, versatile and tastes like the sea. Home cooks always want to know where and how to get great fish. Come learn about three of our local favorites. Dungeness crab is arguably one of the west coasts very best products and we’ll teach you how to make a uniquely delicious “thai” inspired appetizer. Everyone will have the opportunity to work with whole squid, you’ll even get to harvest the ink that makes squid ink pasta. For me, grilled squid (and octopus) are two of my absolute favorites. They are not as difficult to prepare as most think. I will guarantee you that the shrimp we cook in this class will be the best you’ve ever had, the key is to cook them low and slow allowing them to heat up in their own natural juices keeping them sweet and succulent. They go so well with the texture of farro and wait until you taste the Marcona almond pesto. For dessert, you’ll begin to master tart crusts and a beautiful, seasonal filling of strawberries and rhubarb.
