Jordan's Kitchen Cooking Class: Sauce Making


  • Japanese Ponzu sauce served with assorted raw fish (sashimi)
  • Spanish Romesco sauce with roasted red peppers and almonds, grilled bread and summer squashes
  • White wine, mustard and thyme sauce with pan roasted chicken, melted shallots and chicken stock
  • Creme anglaise: vanilla bean custard with seasonal organic fruit and shaved dark chocolate

We’ll have been closed for a two week vacation and I’ll be so ready to get going again. Everyone is always asking for sauce cooking classes so here you go. It was nearly impossible to choose just four so I guess this will be the first of many sauce classes…I wanted to offer four completely different sauces. I’d say crème anglaise is the most classic (and delicious) of dessert sauces. All four are crucial!
