  • Wild halibut “carpaccio” with diced mango, cucumber and micro shiso
  • Wild shrimp with Romesco sauce, roasted red pepper, parsley and toasted almonds
  • Hearty Moroccan spiced fish with tomato, preserved lemon, olives and white wine
  • Chocolate mousse with raw chocolate and sea salt

Go Fish is our biannual fish and seafood cooking class. We emphasize the best quality, wild and sustainable fish from our purveyors at Monterey Fish. Fish is so delicate and one of my favorite products to work with in the kitchen. Just recently I was in NY and ate at LeBernardin, the culinary temple for fish and seafood. I was really inspired…Working with fish takes finesse and confidence. This menu will be a mash up of flavors from around the world. Spanish, Thai, North Africa,etc. Can’t wait to share these recipes and new techniques with you.
