The beauty of good Italian food is its respect for the ingredients. Each season we have the opportunity to showcase amazing local products in this four course class. Fall is the perfect time for mushrooms, fennel, broccoli rabe, fresh olive oil and hearty meats. The dishes become a little richer and more robust. The tricolore salad features delicious chicories covered with Parmesan shavings and vinaigrette. Learning how to make light and pillowy gnocchi is not to be missed. Our main course will be locally raised Berkshire pork tenderloins and then olive oil cake for dessert. Delizioso!
