Here is the next Eataly class menu, sure to be another great Saturday night cooking together in the kitchen. True to the tradition of Italian cuisine, this menu really attempts to highlight some great, local ingredients that are bursting with flavor. Cherries, fava beans, squid, basil, pork and ice cream. Ok, not ice cream but profiteroles are awesome and so fun to make. We are going to learn some great cooking techniques that can be applied to so many things. Like the fava bean puree and the cherry mustard. These two condiments literally make any sandwich you eat incredible. The choux pastry dough we’ll learn for the profiteroles will serve you often in the pastry kitchen. And learning to clean, prep and cook squid is an experience not to be missed.
