This class is the day before my birthday so I thought I would make the theme Chef’s favorites. These are four dishes that I obviously love to eat. The first is a passed appetizer, perfect when guests come by. We take lump Dungeness crab and let it marinate in a basil infused coconut milk. The prop it up on a thin cucumber round. Next is a sweet and spicy lamb meatball with North African aromatics. I could eat these every day…One of my all time favorite dishes is Carnitas. I remember how surprised I was the first time I learned the secret to make this slow cooked pork shoulder so good. It’s ??? For dessert, a warm spiced date cake with pear compote. Happy birthday to me!
