Jordan's Kitchen Cooking Class: CHEF’S FAVORITES

August 17, 2014

5:00 pm - 9:00 pm

  • Chilled seafood salad with avocado, lemon oil and local Halibut
  • Buttermilk biscuits with cherry tomato jam
  • Oven roasted meatballs with San Marzano tomato sauce, basil and Parmigiano
  • Figs roasted in vanilla brown butter

This class features four of my favorite summer dishes. We’ll start with a pristine seafood salad made with clams, mussels, halibut, avocado and lemon. Next we’ll learn to make the most tender biscuits from scratch and pair this with a sweet, salty and tangy cherry tomato jam. This is one of the best condiments ever. The third course is Nonna’s meatballs made with veal, pork and beef and finished with a San Marzano tomato sauce. This is an all timer and a dish you will make for guests the rest of your life. For dessert, nothing can beat a ripe fig in season. Slow cooked in vanilla brown butter, this is a heavenly menu.
