  • Heirloom apples and Gem lettuces with chunks of avocado, toasted hazelnuts, tarragon and coriander yogurt dressing
  • Tartine of Early Girl tomatoes with Josey Baker Bread, Italian Butter bean puree, aged Parmigiano and chili oil
  • Whole roasted boneless pork loin with Dijon mustard and herb crust, green apple and onion puree and blistered Jimmy Nardello peppers
  • Dark chocolate brownie cake with chocolate, almond and sea salt brittle, white chocolate and salted caramel sauce

Our fall California Cuisine class is my favorite. This is a four course menu where all of the dishes can be replicated at home over and over again. As we are transitioning from end of summer produce into fall produce, we get the best of both worlds. We are so proud to work with countless local organic farms and to have built such meaningful relationships with them over the past nineteen years that I’ve been cooking in the Bay Area. This menu is a tribute to all of them and ingredients I love. I still personally start each morning, five days a week at our local farmer’s markets to touch, smell and taste the days freshest ingredients, connect with our farmers and select ingredients that are exploding with flavor and vibrance. To me, this is the only way to cook and to eat.
