  • Deviled eggs with green garlic, Meyer lemon and chives
  • Asparagus and torn bread salad with arugula and shaved Parmesan
  • Grilled Flat Iron steaks with carrot puree, baby broccoli, olives, garlic and pickled peppers
  • Banana and maple syrup souffle

It’s difficult to pin down what the term California Cuisine really means but I think a reasonable starting point is dishes that feature locally grown ingredients that are fresh and delicious. It can be as innovative or comforting as you like. These are four dishes that are fun to make, taste great and just as comfortable on a restaurant menu as they are in a home kitchen. In the past five years deviled eggs have popped up on menus everywhere. They’re delicious; everything with eggs is… It’s asparagus season so we have to have one dish that features our local “grass.” This Panzanella is perfect for the beginning of spring. A main course of grilled Flat Iron steak with lots of bright local vegetables and flavors is just the ticket. And let’s put to rest the fear of souffle, you can do it!
