  • Albondigas, pork and beef meatballs with Pimenton yogurt
  • Figs roasted in vanilla brown butter with honey, Marcona almonds and lemon

These Spanish dishes have big flavors and this is a perfect end of summer menu for home cooks to master. In this class we will take traditional dishes and make them our own with personal twists. Don’t be handcuffed in the kitchen by the word authentic. I mean seriously, which Spanish grandma’s albondigas are more authentic? For that matter, do you prefer Madrid or Catalan? Once you understand the basics, you can then become creative. It’s hard to believe a dish can be any simpler or more delicious then Pan con Tomate when tomatoes are at their peak. Paired with salty Manchego and ham it doesn’t get much better. Similarly, crispy potatoes in Bravas sauce is such a classic, it’s flavors and textures addictive. And anything with figs in it is automatically a favorite!
